These reactions are called Type 1 (IgE mediated ) immediate hypersensitivity reaction. Some people can also have delayed reactions to foods. These are called Type 2\,3\, or 4 (Antibody IgG\, IgM\, IgA\, Immune Complex & cell-mediated) hypersensitivity reactions which occur several hours to days after exposure. The symptoms are usually chronic because you don't relate them to the food you eat due to the delayed reaction so you keep eating the offending food. Symptoms vary by individual and can range from general malaise to headaches or irritable bowel or more.
